The dough has to look a certain way to pass Jimmy's standards. He learned what the bread is supposed to look and feel like from his own father, and he strongly enforces those standards. Stepping inside Columbus Bakery is a rush for the senses: the warmth from the ovens, the smell of fresh bread, and the sight of loaves alongside family pictures and pinned-up daily orders. It's a time machine, a historical marker, as much as it is a bakery.
